Blackberry Jam Recipe

This recipe was found during renovation work and given to me by one of the builders

I made this using local berries sourced from Alloa, Stirling and Falkirk.

The recipe……

Yield 10lb



  • 6lb Blackberries
  • One quarter pint water
  • Rind and juice of two lemons
  • 6lb Sugar


1. Put the cleaned fruit, the water lemon rind and juice into the pan.

2. Simmer until fruit is soft.

3. Stir in the sugar and boil rapidly until setting point is reached.

4. Remove from the heat, skim, pot, cover and label
